Pasta with sundried tomatoes and feta cheese
Cook pasta with a little bit of oil and drain it. In a food processor, add sundried tomato halves, basil leaves, parmesan cheese, garlic and a little bit of salt and pepper. Combine this mixture and add a cup of water to this. Place the cooked pasta in a pan and then add the mixture. Cook for a while and crumble feta cheese on top. Voila! You’re good to go.
Oven baked garlic and cheese potatoes
If, like us, you feel that potatoes and cream are an absolute match made in heaven, don’t think before you try this!
Peel and slice potatoes thinly and place them in a large bowl. To this, add grated parmesan cheese, cheddar cheese, a cup of cream and some garlic. Add salt and pepper. Mix everything and scoop into a baking dish. Sprinkle some more cheddar cheese on top. Bake this in a pre-heated oven at 175 degrees for 30 minutes or till the upper crust turns brown. Serve hot and fresh!
Brussels sprouts with mushrooms
So you wish to cut down on the fat, we’ve got something in store for you too! In a pan, heat olive oil and add some sliced shallots. Cook the shallots until they turn translucent and to this, add the Brussels sprouts. When the sprouts are cooked and tender, remove them from flame. Add some more oil to the pan and cook some mushrooms and thyme leaves until tender. Add a splash of white wine and some salt and pepper to this. Return the sprouts and shallots to the pan and cook for a minute or two.
Chilled avocado soup
How could you possibly beat the heat without a chilled, easy soup? All you’ve got to do is this: in a food processor, combine one cup of vegetable broth with garlic, jalapenos, lime juice, cilantro and avocados. Puree until smooth, and to this, add some more broth with salt and pepper. Cover and chill for a few hours. Divide into bowls, garnish with sour cream. And hey! You’re good.
Baked peaches with cardamom yoghurt
You think we could let you go without an easy dessert? Peaches are just the perfect fruits for desserts. And all you have to do is this. Halve, and pit the peaches. Add chopped almonds to a bowl or pan. Crust the peaches, side down, with the chopped almonds. Bake this at 350 degrees for around 30 minutes. For the cardamom yoghurt, in a small mixing bowl, add yoghurt, ground cardamom and a drop of honey. When the peaches are done, drizzle the beautiful yoghurt mixture on them and enjoy this super easy bite of heaven.
